May 26 - On sale at Lovey's

DAIYA on sale at Loveys. Bought 3. Freezing 2.

Trying these for the 1st time because on sale... Gluten free & Vegan. FREEZER of Loveys.

Lazy Day Eats...
When I don't feel like cooking this is usually what I go for...
I already have the regular ones on the left in my freezer but grabbing the ones on the right now - never tried and duh because currently on sale... :-)

Not on sale and I have 2 half packages of it so not getting today... I freeze these because I don't eat bread often... so when I do decide to eat it I put in the toaster twice and its perfect. :-)

Gluten free and Vegan :-)
Loveys/Tidal Creek/Harris Teeter carry it. I believe Food Lion too!

They use eggs in this bread so its not vegan but for just the Gluten free friends... this is on sale and I do believe they have a printable coupon on the Rudi's website that you can also use.

Buy when on sale and freeze until you're ready to use!

I use these all the time. If you ever eat at Loveys (the grocery/cafe in Landfall) you can request to have your burrito Gluten free (this is the burrito wrap that they will use!) You can also request to have it vegan sour cream (tofutti) that they also carry.

I also get these and freeze. Only have seen these at Lovey's.

They have alot more sodium than I'd like... their servings on the ingredients is by the 1/2 of an english muffin if that tells you anything but I'm always up to try something new.
Plus they are on sale and also had a 50 cent off coupon sittng right in front of them (see the "Healthy Clipping" piece of paper I accidentally cut off in the pic?) hehe... so.of course I had to get them. I put them straight in the freezer. Then toast twice I suppose just like the bread when I want to use :-) Would be good with crunchy almond butter then sprinkled with chia seed or my strawberry jelly from the farmers market paired with a cup of coffee one morning ;-)
COUPONING:
When you see a stack/machine of coupons look at when the expiration date is on the coupon and think about if it'll be worth it to grab more than one. I personally took 2 coupons. 1 for todays purchase and 1 to have if I like the english muffins when I try them. The coupon expires June 30, 2011.

COUPONING 101:

Don't buy something JUST because it has a coupon. Sure, if you NEED it/use it regularly and you happen to have a coupon... go ahead! But if you're looking to really stretch the savings... wait and save that coupon for when the store puts the item on sale. If its something you'll use lots of and it won't go bad soon (remember you can always freeze stuff!!!) then buy several so that you make the savings worth it.

I included a picture of the sales paper and the "Healthy Clippings" booklet from Lovey's. The "Healthy Clippings" coupons can be used at either Lovey's or Tidal Creek. So keep them with you so you can check to see if you have coupons for items when you are shopping!! :-)

While shopping for my specialty items at Loveys & Tidal Creek I am not going to be able to be as "money savvy" as the regular grocery stores but I'm going to try my best to stick to buying my items only when they are on sale.

As you can see on my receipt I saved 10% off on each of my items with my Lovey's membership card. It costs $25 a year (I just renewed) and you get a free reusable grocery bag with your membership! Keep your bags in your car with you for sudden grocery shopping trips to be green! (PLEASE!)

EATING IN Raleigh-Durham-Chapel Hill

MAGGIANO'S LITTLE ITALY:
Italian. Make sure you have reservations. Ryan and I ate at the one in Atlanta but couldn't eat there in Raleigh-Durham because they were so packed.

They have gluten free pasta.
I think it was the CLASSIC PASTAS... but it was a deal because if you ordered one of them, you were able to choose another CLASSIC PASTA to take home with you... so Ryan and I had pasta that night and didn't even finish it and then had an entire meal plus leftovers for the following day. Pretty neat.

CARMINE'S:
Yummy gluten free pasta but silly that they charge you $4 more for the gluten free pasta.

Whole Foods & Trader Joe's

...are 2 amazing grocery stores that they have in the area... they're amazing! "Word on the street" is that good ol' Wilmington is getting a Whole Foods where the grocery store was to the left of Independence Mall on Oleander. Awesome! I also heard maybe Trader Joe's but I almost feel like that's too good to be true! We shall see! I pray we get both!

We went to both and I was in awe! We stocked up on a lot of stuff to bring home and to also eat while we were out of town, instead of eating out for all of our meals.

It's been a while...

So I have decided to do the Wrightsville Beach Half Marathon on March 20th... I know it seems like a long ways away, but it has to be for ME to be ready... I haven't been running or doing any REAL strenuous exercise lately... so I kinda believe I'll be starting from scratch... I might do a couple 5Ks and 10Ks leading up to it just to do them, and have themunder my belt, since I haaave only done 2 5Ks EVER. I wish it wasn't so cold outside but I guess it's better than being sweltering hot outside? Right? Ek. Anywho! If anyone is interested in joining me, VOLUNTEERING, or just wants to check out more info for the heck of it, look at the links posted below.... :)

February 4-6th Ryan is going to be competing in the CrossFit Garage Games in Georgia. Oh and then it's Valentine's Day, wow first time I'm actually looking forward to it :)

But back to what I was talking about, haha... I'm really so proud of him! If you didn't know he won CrossFit Wilmington's “Not Normal / Give Yourself Abs for Christmas” contest!

Ryan dropped 22lbs… from 192lbs
BEFORE Picture:

down to 170!
After Picture:

He worked really hard for it and really deserved it. :)
Proof that it's ALL about HOW BAD YOU WANT IT! ...Seriously!
He looks good huh? Back off ladies ;)

So now that I'm looking at my calendar,
I can't believe this year is about to be over,
which reminds me... NEW YEARS... New Years Resolution...!!

Do you know what my New Years Resolution was last year?
NO MORE MEAT... :-)
I became a veggie head hehe... best decision ever I have to say.
This past year I have been blessed in so many ways... and I'm very thankful.

My New Years Resolution this year is going to be more like a promise to myself, and a goal, because who writes the rules on what you can say is your New Years Resolution?!?!

But my promise to myself is to work on how much trash/recycling I make. Confused? Don't be. Danielle Richardet that you've heard me mention before, the one that writes the blog It Starts With Me that has inspired me in countless ways to change things I never would have thought about, keeps track of her plastic use...

Mind you, I do always consider the packaging that my foods come in, and I don't use plastic bags, and I do recycle, and wash and keep all of my plastic containers, yadda yadda yadda... BUT there is ALWAYS more that I can do. I want to start decreasing the purchase of the products that DO come in the plastic packaging, because WHO needs 438957348957893 plastic containers?!

No one.

I recycle every itty bitty piece of anything possible that you can recycle and sometimes go into peoples trash (that I babysit for... please don't judge me) and I take out things that could easily be recycled that they maybe just didn't think about.

Okay, yeah and then my goal to myself is the Half Marathon... :)

Are you voting?

Yeah, I admit... it is kinda sad.
But I fall into this category, because I do watch the show.
And yes, it makes me laugh.

I got these chips @ Harris Teeter last night after my hiphop dance class :)
They were UH-mazing. Yeah, duh... gluten free & vegan.

Cigarettes I picked up around ONLY 3 apartment buildings in The Reserves.

VEGAN/GLUTEN FREE

It's not very common to find someone that is

VEGAN AAAAAAND GLUTEN FREE (AKA VEGIAC)

but I live to make life interesting hehe... oh but the point of making

that statement (I am SO ADHD)... is that I found a good website for Vegiacs.

hahaha this is freaking cute.

I goodie that Lauren Horne found on Textsfromlastnight.

"(516): There are going to be so many Snookis this Halloween that I might

just dress as the guy that hit her and punch them all in the face"

Thanks for this Kailee... :)

"You can explore the universe looking for somebody who is more deserving of your love and affection than you are yourself, and you will not find that person anywhere"

La Bella Vita

Chipotle roasted sweet potatoes & vegetables

Roasted sweet potatoes, black beans, corn, red bell pepper, entire onion, chipotle & jalapeno pepper, cilantro, cumin, coriander, red chili pepper... over brown rice :)

"An estimated 800 million pairs of jeans are sold worldwide each year."

-Whole Living Magazine

WOW! I love a pair of jeans... but yikes! Just last week I got a "new" pair of designer jeans from Hallelu (on Wrightsville Beach, beside WINGS) for like $45 opposed to the like $200 that they normally cost. They were basically brand new... and actually fit perfect. I am going to have to get all new jeans this year :( and :) ... I put a sad face because money, but happy face because the reason I have to get new ones is because all of mine are huge on me now.

...FERNS...

are masters at clearing indoor air...? Who knew! It's the most effective air-purifying species... Whole Living Magazine says to put one (or many) in a bathroom with a window and let the steam from the shower act as a virtual greenhouse. (hmmmm that is pretty neat)

STRESS

Greenery reduces stress. Studies show the presence of plants significantly eases the recovery of hospital patients & lowers the blood pressure of office workers.

I can't wait until (I think) March when my lease is up at my apartment and I can move into a house with (hopefully) Kailee... I can't wait to paint a wall with that chalkboard paint. I think it is SO neat. I also think it would be cool to have like a "corkboard" wall, so we could put up pretty pictures, recipes, random pictures up and like make a collage...

When I "grow-up" aka get married and settle down, I plan ;) to have an office where I can have one wall with the chalkboard paint (for myself) or my kids to play on, a corkboard wall... and yeah I'll stop with my daydreaming... :)

Do you have migraines/headaches?

I've suffered from migraines my entire life... yes, even as a child... and completely think that my change in my diet, without a doubt helped me out... especially the dairy/cheese.

Beautiful skin...

Karyn Calabrese, a holistic health expert said "I use coconut oil for everything, without fail. It works as a makeup remover and as an intensive moisturizer. Jojoba Oil is even lighter and keeps oil skin in balance." It's absorbed into the skin instead of sitting on top of the surface, blocking pores and causing breakouts unlike mineral oils.

(I loved hearing this because I myself use coconut oil for ABSOLUTELY everything. Cooking, makeup remover, lotion, EVERYTHING... seriously. There is a glass jar of it right this second in my purse... you can get it at Tidal Creek & Fresh Market in the big containers... not positive about the other places. I'll have to go and get some Jojoba Oil to try out.

10-25% of Americans have a sensitivity to at least one food.

-Thought this was interesting because of gluten "deal"-

Brain Food

blueberries - red wine - dark chocolate

NAP TIME

2003 Harvard study showed that a 60-90 minute nap, including both slow-wave and REM sleep stages, boosted learning retention as much as a full 8 hours of sleep!

BUILD YOUR IMMUNITY

Veggie ppl way: beans, legumes (lentils, chickpeas, kidney beans)

nuts, and seeds (try sunflower & pumpkin)

Battle of the Superfoods

Almond Butter > Peanut Butter

Almond butter has 60% more monounsaturated fat than peanut butter.

This fat decreases harmful LDL levels, lowering heart-disease and stroke risk.

-Runners World Magazine

Kale > Spinach
Kale contains 4 times more vitamin C and one and a half times
the amount of immune-boosting vitamin A & vitamin K.

Quinoa > Brown Rice

Quinoa has 3 extra grams of protein per cooked cup

plus more fiber, iron & magnesium.

Orange > Apple

Have similar amounts of calories & fiber but oranges have 12 times as much vitamin C.

Red Pepper > Green Pepper

Red Pepper has 8 times the vitamin A

(keeps your immune system strong)

Stole these from their facebook page :) so cute!

When I first became vegan... I ate THIS (click on this) seriously almost every night for dinner... and would put it with a vegetable (broc or green beans usually) and a cup of brown rice.
It's not gluten free, so I don't eat it anymore...

Vegan & Gluten Free Mac & Chz & Apple Crumble

Thanks to Happy Herbivore I made vegan & gluten free Mac & Cheeeze :)
Her recipe is found here: Mac & Chz

I used gluten free penne to make it gluten free.
I put diced tomatoes with mine...
because I don't know how to eat anything just by itself

Apple Crumble
Slices apples... 1/2 unsweetened organic applesauce, gluten free oats,
agave nectar, lots of cinnamon... hmmm I think that's it.
I baked it at 350 degrees for 40 minutes.

I put it on top of almond ice cream for Ryan.
I tasted it but was too full to actually eat because of the mac & chz.
He said it was amazing. :)
